RECIPE: Inji Legiyam (Digestive Aid)

Legiyam is a paste that’s consumed to aid digestion. Traditionally, it’s made in South India around Deepavali (when lots of indulgent feasting happens!), but you can have it throughout the year.

INGREDIENTS

  • 100gm fresh ginger, washed, peeled and grated (Retain juice)

  • 4 tbsp SaveAGram coriander powder

  • 4 tbsp roasted jeera (cumin) powder

  • 3 tbsp roasted ajwain (carom seed) powder

  • 1 cup SaveAGram jaggery

  • 2 tbsp honey

  • 1 tbsp ghee OR 2 tbsp gingelly oil


METHOD

  1. Boil jaggery in a pan (SaveGram jaggery is extremely pure. To enjoy the benefits of this legiyam, do not use jaggery with impurities)

  2. Once jaggery has thickened a little, add the grated ginger, coriander powder, roasted jeera powder, and roasted ajwain powder. Keep stirring (as this burns easily).

  3. Once thickening, add ghee/gingelly oil and it will visibly thicken more.

  4. Turn off stove and stir in the honey.


Eat half a teaspoon before a meal when you are having digestive issues, or are about to eat a heavy meal. Store the paste at room temperature.
